Facilitators for this webinar include Kelly Kunkel and Mary Schroeder, Extension Educators in Health and Nutrition with the University of Minnesota Extension Center for Family Development. Kelly's work has been dedicated to changing the food environment to improve food access and choice for low-income audiences through programming for food shelves, early care and education, and school settings. Kelly Kunkel has worked for the University of Minnesota Extension since 1994. Mary is a Registered Dietitian Nutritionist. Her work focuses on creating healthy food environments for children and youth through policy, system, and environmental changes. Recent projects include developing a culinary nutrition education curriculum for family child care providers, providing training for school food service staff, and developing a two-menu people could use in emergencies.
